The Story of the Bread & Butter Concepts
It began in 2007 when high school friends Alan Gaylin and Glynn & Jean Roberts decided to pursue an idea they had hatched in college, years before. The idea was for a modern burger joint that went beyond slinging patties. What was born was BRGR Kitchen + Bar, which opened in 2010. This Prairie Village hotspot – featuring gourmet burgers with fresh, local ingredients – immediately became the place to relax over dinner with friends. To this day, it's Kansas City's best bet for great comfort food and a casual, modern dining experience.
The success of BRGR Kitchen + Bar, combined with available space in Corinth Square, prompted Gaylin & Roberts, to move forward with a second concept. The result was Urban Table. It offers a modern American interpretation of the corner cafe and market. Urban Table, which opened in July of 2011, combines the best qualities of a dine-in or take-out breakfast kitchen and lunch shop, and an evening spot that welcomes patrons for unique small plates, charcuterie and fresh entrees, or an after-work drink among friends from the impressive wine and craft beer lists. As with BRGR Kitchen + Bar, Urban Table opened to great success and has joined its older brother as a new hot spot.
Inspired by these two success stories, Bread & Butter Concepts decided to open a third restaurant, this time in the Plaza. The new restaurant would be a casual gathering place where patrons could drop by for a pint or make plans for an evening of fine dining. Either way, the establishment would welcome guests to a comfortable environment with the promise of exquisite service and relaxing atmosphere. Enter Gram & Dun, Kansas City's original gastropub (opening November, 2011). The term gastropub derives from Britain as a description of a public house, or pub, that focuses on dining as well. Gram & Dun takes the term to a whole new level by presenting top quality, gourmet dishes in an environment that avoids the stuffy atmosphere of many fine dining restaurants, and focuses on ideal pairings of food and beverage.
