’Tis the season for thanks and celebration – a time to cherish traditions, family and the community. When I think of tradition and family, I think of the Au Gratin potatoes that my mom used to make during the holidays. They were delicious and savory and they had an amazing crust of cheese on top that I would always sneak into the fridge for. They were so darn good that I'd eat those leftover potatoes cold. Many of my fondest memories involve flavors and food. In fact, flavors and food are a surprisingly consistent memory across many cultures and traditions. It seems that just about everyone has a food-related story or memory from the holiday season that they will cherish always. I guess those food memories make sense for me, having been in the restaurant business my entire life. But they also in inspire in me the need to help be a part of creating delicious holiday memories for folks whose fortunes are less food-filled. With that in mind, each year at Bread & Butter Concepts (BBC) we try to give back in some small way — with warm, delicious food. The last few years during the holiday season my BBC team has provided warm, nourishing meals to the less fortunate folks at KC Rescue Mission and the VA Hospital. This act of community service is something that I hold very near to my heart, and that speaks directly to the mission of our company — to give back to people in need, and to make our giving something memorable and comforting.

Mom Gaylin’s Au Gratin Potatoes Recipe

Boil new potatoes in skins, cool, peel, and cut into pieces.
Make cheese sauce as follows, using 1 cup for every four potatoes.


Cheese Sauce 
2 tablespoons butter
2 tablespoons flour
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. dry mustard
1 cup milk
1/2 cup grated Cheddar cheese
  1. Bubble flour, seasonings, and butter about 1 minute. Remove from heat and add milk. Keep stirring until thickened. Blend in cheese and stir until cheese is melted.
  2. Mix sauce with potatoes in a large bowl. Add salt and pepper to taste.
  3. Put in greased pan, sprinkle with additional Cheddar cheese. Bake in 350 degree oven until hot.
